Heat the oven to 400°

Toss the cauliflower in a bowl with 1tbsp of the oil. Add Jerk sauce OR jerk seasoning and mix to coat the cauliflower.

Place cauliflower on a sheet pan lined with parchment or coconut oil cooking spray.

Bake 20 minutes (until tender and golden brown), stirring after about halfway through.

In a frying pan, heat 1tbsp of the oil and saute the onions and carrots for 3-5 minutes or until they start to brown then add spinach and further cook just until the spinach begins to wilt. *Add more oil or a bit of water if necessary.
Step 6
Place the mixture in a medium mixing bowl and set aside.

Blend or pulse all of the ingredients (except salt and pepper) until smooth and creamy.
Step 8
Add salt and pepper to taste.
Step 9
Warm the corn tortillas in the pre-heated oven for1-2 minutes.
Step 10
Toss the spinach mixture with some of the avocado lime crema and add a layer on each tortilla.
Step 11
Add a portion of the jerk cauliflower to each tortilla and chow down.
