Step 1

Combine peanut butter, water, soy sauce, lime juice, maple syrup, sriracha sauce, garlic powder, and ground ginger in a bowl. Whisk together until smooth and creamy.

Step 2

Warm oil on a frying pan. Add minced garlic and vegetables of your choosing. Cook, stirring occasionally, for 5-7 minutes or until tender.

Step 3

While the vegetables are cooking, prepare noodles according to package instructions.

Step 4

Combine noodles and vegetables. Add as much peanut sauce as desired, then toss the ingredients to evenly coat everything. Serve with chopped peanuts and fresh cilantro.
