Slurpalicious Vegan Peanut Noodles

spaghetti noodles

sesame oil

green onions, diced (for serving)

peanut butter, smooth

coconut milk (full fat)

Tamari

Chili garlic sauce

rice vinegar, not seasoned

lime juice

First cook noodles according to package instructions. Add to a colander, drain and rinse well with hot water. Return noodles to the pot. Add a drizzle of sesame oil, mix, and set aside

While noodles are cooking prepare your peanut sauce

add all ingredients to a medium sauce pot. Whisk together and heat on medium low heat until the sauce is warm, no need to simmer.

Easy Peanut Udon Noodles

oz thick cut udon noodles

cucumber

block extra firm tofu (optional

scallions (garnish)

sesame seeds (garnish)

peanut butter

soy sauce

tbsp toasted sesame oil

tsp sriracha

tbsp rice vinegar

garlic

ginger

First, boil the noodles according to box instructions. Save hot water for the sauce.

Whisk together dressing ingredients in a large bowl.

Spiralize or thinly slice cucumber.

Cut tofu into thin slices or cubes and air-fry, bake or sauté. I suggest sautéing in a little oil until golden on both sides, then add a little coconut aminos or soy sauce to the pan and saute on low until absorbed. Sprinkle sesame seeds on top of the tofu.

Add noodles to the sauce bowl when they&#39;re done cooking, then add in the cucumbers. Toss until well combined.

Serve in bowls, add the tofu on top with the sesame seed and scallion garnish.

15 Minute Thai Peanut Noodles

Boil your dried noodles according to the direction. Drain and rinse with cold water afterwards.

Meanwhile, prepare the Thai peanut sauce.

In a large bowl, toss together the cooked noodles, peanut sauce, cucumber, carrots, and cilantro. Serve immediately or store in an airtight container in the fridge for up to 3 days.

Vegan Peanut Noodles

udon noodles (300 g)

courgette (or 1 small)

carrot

yellow bell pepper

red bell pepper

peanut butter (4 oz, 110 g)

tamari soya sauce (60 ml)

rice vinegar (60 ml)

tbsp toasted sesame oil (14 ml)

tbsp sriracha (28 ml)

tbsp brown sugar

water (60 ml)

Prepare the noodles according to their packaging instructions.

At the same time, wash and chop up your vegetables - carrots, courgette and peppers - into thin strips.

Add a little sesame oil to a frying pan over medium heat and sauté the vegetables until soft.

In the meantime, prepare your peanut sauce: simply combine all ingredients in a bowl and slowly whisk up the sauce until smooth. It will need a little whisking for the peanut butter to break down - just continue whisking for 1-2 minutes until it&#39;s all smooth and creamy.

Drain the cooked noodles, add them to the pan with the vegetables and remove the pan from the heat. Pour in the peanut sauce and stir well to combine.

Serve hot or cold and top with crunchy peanuts, a sprinkle of sesame seeds or fresh spring onions.

Combine peanut butter, water, soy sauce, lime juice, maple syrup, sriracha sauce, garlic powder, and ground ginger in a bowl. Whisk together until smooth and creamy.

Prepare vegetables

Warm oil on a frying pan. Add minced garlic and vegetables of your choosing. Cook, stirring occasionally, for 5-7 minutes or until tender.

Prepare noodles

While the vegetables are cooking, prepare noodles according to package instructions.

Serve

Combine noodles and vegetables. Add as much peanut sauce as desired, then toss the ingredients to evenly coat everything. Serve with chopped peanuts and fresh cilantro.
