Step 1
Preheat oven to 350°F. Line a 9-inch pie plate with pie crust, trim edges and crimp. Set aside.
Step 2
In a skillet over medium heat, melt the butter. Add green onion, bell pepper, yellow onion, and garlic, and cook until vegetables start to soften, 3 to 5 minutes. Set aside.
Step 3
Scatter half of the ham and half of the cheese in the bottom of the pie crust.
Step 4
Whisk together the cream, eggs, salt, and pepper. Add the bell pepper/onion mixture and stir to combine. Pour half of the custard mixture over the ham.
Step 5
Top with remaining ham and cheese, then pour the remaining custard mixture over the top.
Step 6
Transfer pie pan to a baking sheet, then bake until the center has set and the top is golden brown, about 1 hour. Let rest at least 20 minutes before slicing and serving. Enjoy!
