Denver Omelette

eggs

milk

salt & pepper (to taste)

butter

onion

ham (diced)

green bell pepper (diced)

red bell pepper (diced)

cheddar cheese (shredded)

Beat eggs, milk and salt &amp; pepper with a fork. Set aside.

Melt butter in a 6” skillet over medium heat. Add onion and cook until slightly softened about 3 minutes.

Add ham and peppers. Cook an additional 3-5 minute or until peppers are tender.

Turn heat to medium-low and add egg mixture. Allow to cook about 2 minutes.

Run the spatula along the edges of the egg mixture while lifting the pan to allow raw egg to run underneath the cooked eggs.

Once the eggs are almost set, add cheese and cover. Cook until top is set and cheese is melted, about 5-6 minutes.

Fold in half and serve.

eggs ((or use 4 eggs and 6 egg whites))

whole milk or 2% milk ((or sub with half-and-half

salt

(about ¾ cup) diced cooked ham

cheddar cheese

green bell pepper

red bell pepper

Optional garnish: chopped fresh parsley or chives

Whisk together eggs, milk, and seasoned salt in a large bowl. Stir in ham, cheese, onion, and bell peppers.

Pour egg mixture into a greased 8-inch-square baking dish.

Bake at 350°F for 45 minutes – 1 hour, or until eggs are cooked and the omelet is set.

Cut into squares and garnish with chives, if desired.

Western Omelet Quiche

pie crust

unsalted butter

green onions, thinly sliced

green bell pepper,

red bell pepper,

yellow onion, diced

garlic,

ham, divided

cheddar cheese,

heavy cream

black pepper

Preheat oven to 350°F. Line a 9-inch pie plate with pie crust, trim edges and crimp. Set aside.

In a skillet over medium heat, melt the butter. Add green onion, bell pepper, yellow onion, and garlic, and cook until vegetables start to soften, 3 to 5 minutes. Set aside.

Scatter half of the ham and half of the cheese in the bottom of the pie crust.

Whisk together the cream, eggs, salt, and pepper. Add the bell pepper/onion mixture and stir to combine. Pour half of the custard mixture over the ham.

Top with remaining ham and cheese, then pour the remaining custard mixture over the top.

Transfer pie pan to a baking sheet, then bake until the center has set and the top is golden brown, about 1 hour. Let rest at least 20 minutes before slicing and serving. Enjoy!
