Step 1
Make the jeon dipping sauce by mixing 1 tbsp soy sauce, ½ tbsp apple cider vinegar, ½ tbsp sugar, ½ tsp gochujang, 1 chopped green onion, and ½ tbsp toasted sesame seeds.
Step 2
In a large bowl, add 1 extra large thinly sliced onion, two eggs, ¼ cup water, ½ cups all purpose flour and a chopped green onion. Stir and mix thoroughly, making sure to poke the egg yolks while mixing.
Step 3
Add approx. 2 tbsp oil to a large, non-stick pan. Heat over medium-high to high heat. Once the oil is hot enough, add a spoonful of onion batter. Immediately use a spoon to poke and flatten so it spreads outwards. Repeat with the rest of the mixture to make approx 8 jeon. Remember to stir the onion batter frequently to prevent pooling at the bottom.
Step 4
Fry the onion pancakes for 3-5 minutes on each side, or until golden. Flip carefully with a spatula and spoon. Add more oil before frying the next batch.
Step 5
Serve immediately with jeon dipping sauce.
