Step 1

Chicken Rub:

In a small bowl add chili powder, smoked paprika, garlic powder, onion powder and combine.

Step 3

In a separate bowl add chicken tenders and 2 tbsp of olive or coconut oil.  Sprinkle seasoning overchicken and toss together until coated.  Wrap and let sit in fridge until ready to grill.  This can be done several hours in advance or just minutes before.

Teriyaki Sauce:

NOTE: If you have a scale use that to measure the ingredients as it will be more accurate.  If not I have noted the amount in cups.

Step 6

Add the granulated sugar, mirin, sake, and soy sauce to asmall to medium sauce pan.

Step 7

Place pan over medium heat and stir until sugar has fully dissolved.  This should take less than 5minutes.  Once done, set aside until ready to serve.  If you prefer a thicker sauce leave on heat and stir every few minutes for up to 15 minutes.

Vegetables and Rice Bowl Assembly :

Preheat the oven to 400 degrees

Step 10

Cut broccoli heads into small similar sizes florets and thinly slice red onion.  Toss together in 1 to 2 tsp olive or coconut oil, season with a pinch of salt and pepper.

Step 11

Spread out in a single layer on a baking sheet. Do not crowd so that the vegetables roast instead of steam. If there is not about 1/2 between everything, divide between 2 baking sheets.

Step 12

Roast at 400 degrees for 15 to 18 minutes.

Step 13

If using fresh corn on the cob. In a large stock pot add water and about 1 tsp of salt.  Bring to a boil and add 2 or 3 cobs.  Cook for about 6 minutes and then once cooled slightly cut kernels off with a sharp knife. If using frozen corn.  Add 2 cups to the bottom of one of the baking sheets with about 10minutes left.

Step 14

While the veggies are roasting heat grill to high heat and grill chicken tenders for 4 to 5 minutes on each side or until cooked through.  Remove from grill and let rest for a 1 to 2 minutes beforecutting into strips or cubes.

Step 15

Cook rice according to instructions on packaging.

Step 16

Assemble as desired with rice, vegetables, chicken, crispy onion, peanuts, and carrots.  Drizzledwith teriyaki sauce and some cilantro for garnish.

Step 17

Serve while warm and enjoy!
