Step 1

Squeeze excess moisture from zucchini. Combine zucchini, cheese, onion, breadcrumbs, parsley and egg in a bowl. Season with salt and pepper.

Step 2

Heat half the oil in a large frying pan over medium heat. Add 2 heaped tablespoons of zucchini mixture to pan. Flatten with a spatula. Repeat to make 3 more fritters. Cook for 2 to 3 minutes each side or until golden brown and cooked through. Transfer to a plate lined with paper towel. Repeat with remaining oil and zucchini mixture to make 8 fritters.

Step 3

Make mint yoghurt: Place ingredients in a small bowl. Mix well. Serve with fritters
