Step 1

Cut avocados into long wedges: Slice the avocado in half, then remove the pit. Use your hands to remove the skin. Slice each half lengthwise into ¼-½ inch thick slices.

Step 2

Place the avocado slices on a plate and sprinkle the avocados with lemon juice. This keeps the avocados from turning bitter after cooking.

Step 3

In a bowl, add coconut flour. In another bowl, whisk the eggs. In the last bowl, stir together pork panko, garlic powder, paprika, and sea salt.

Dredge an avocado slice in coconut flour, shake off excess, then dip in the egg wash. Finally, dredge in the pork rinds mixture so all sides are covered. Transfer to a plate then repeat with the rest of the avocado slices.

Step 5

Preheat air fryer to 375 degrees F.

Arrange the avocado slices in a single layer on the air fryer tray.

Step 7

Optional: Spray with cooking oil for an extra crispy texture.

Step 8

Air fry for 10 minutes until browned and crispy.

Preheat the oven to 425 degrees F, then line a baking sheet with parchment paper.
