Crispy and delicious keto avocado fries in air fryer or the oven! So crunchy on the outside and soft and creamy on the inside, they make a perfect snack.

Air Fryer Avocado Fries

avocados

lemon juice (or lime juice)

coconut flour

eggs (whisked)

pork

garlic powder

paprika

tsp sea salt

Cut avocados into long wedges: Slice the avocado in half, then remove the pit. Use your hands to remove the skin. Slice each half lengthwise into ¼-½ inch thick slices.

Place the avocado slices on a plate and sprinkle the avocados with lemon juice. This keeps the avocados from turning bitter after cooking.

In a bowl, add coconut flour. In another bowl, whisk the eggs. In the last bowl, stir together pork panko, garlic powder, paprika, and sea salt.

Dredge an avocado slice in coconut flour, shake off excess, then dip in the egg wash. Finally, dredge in the pork rinds mixture so all sides are covered. Transfer to a plate then repeat with the rest of the avocado slices.

Preheat air fryer to 375 degrees F.

Arrange the avocado slices in a single layer on the air fryer tray.

Optional: Spray with cooking oil for an extra crispy texture.

Air fry for 10 minutes until browned and crispy.

Enjoy dipped in your favorite sauce like fry sauce, mayo, ranch, etc.

Air Fryer Method

Preheat the oven to 425 degrees F, then line a baking sheet with parchment paper.

Place avocado slices on the parchment lined baking sheet in a single layer.

Bake for 12-14 minutes until browned and crispy, flipping them halfway through.

Oven Method

This keto teriyaki chicken recipe will be your favorite when you crave take-out. In this one pan recipe, chicken thighs are pan seared and tossed with vegetables and coated with a sweet and tangy low carb teriyaki sauce. 

Keto Teriyaki Chicken

soy sauce, tamari or liquid aminos

avocado oil

brown sugar substitute

apple cider vinegar

garlic clove,

tomato paste

arrowroot powder

ginger ginger

sesame seeds, optional

chicken thighs or chicken breast

Make teriyaki sauce

In a small bowl, combine the soy sauce, avocado oil, brown sugar substitute, apple cider vinegar, tomato paste, garlic, arrowroot powder, ginger and sesame seeds (if using). Mix until combined. Set aside.

Pan sear chicken

Lightly coat a skillet with cooking spray and heat over medium high heat. Add chicken and cook on each side for 3-4 minutes or until cooked through. 

Add vegetables 

Remove chicken and add vegetable, if using, and cook until softened. 

Add teriyaki sauce

Add back in the cooked chicken and pour in teriyaki sauce. Let cook over medium heat until sauce bubbly and thickened. 

Instant Pot instructions

Mix the ingredients for the teriyaki sauce, leaving out the arrowroot powder for now. Add chicken and vegetables to the liner of the Instant Pot. Add most of the sauce - reserve a tablespoon or two. Pressure cook high for 10 minutes.  Let pressure release naturally for 5 minutes before releasing the rest of the pressure. Mix remaining sauce with arrowroot powder and add to cooked chicken and stir-fry vegetables. Using sauté mode, cook until sauce is bubbly and thickened.

Air Fryer Cod

almond flour

parmesan cheese

pork rinds

oat fiber

eggs

smoked paprika

garlic salt

black pepper

Preheat air fryer at 400°F for 5 minutes, while you prepare the breading.

Add the eggs in one bowl and whisk. In another bowl, add in the oat fiber.

In a third bowl, add in the almond flour, parmesan cheese, pork rinds, smoked paprika, garlic salt and pepper.

Take each piece of the cod, dredge it in the oat fiber, shaking off any excess.

Then dip the cod into the eggs, allowing excess eggs to drip off. Dip the cod into the breading mixture for a light coating.

Then place the breaded cod on the rack of your air fryer, that’s been sprayed with nonstick olive oil spray.

Spray the tops of each piece with the olive oil spray and cook for 12-15 minutes, depending on the thickness of your fish.

Flip and spray more olive oil over the tops half way through.  Continue cooking until the internal temperature of the cod is at least 145°F when checked with a thermometer.
