Step 1
Place a pot with water on the stove top. Add in the sweet potatoes and potatoes allow to parboil for 18-20 minutes.
Step 2
This works best for larger sweet potatoes (like two large ones), so if using smaller potatoes start to check around 15 minutes that a fork can stick into the middle of it, but is still firm.
Step 3
Once ready, remove from boiling water and run cold water over the potatoes to stop them from cooking. Allow to cool completely. Once potatoes are cooled, peel the skins off the potatoes.
Step 4
Using a large side of a grater, grate all the potatoes, add the shreds into a large bowl.
Step 5
Add the honey, chilli oil, grated cheese, egg and corn flour. Mix until well combined. Roll into balls and shape into tots, by holding both ends with index finger and thumb, then rub/roll the centre into little totes.
Step 6
Using a regular or silicone pastry brush, brush the tater tots with olive/coconut oil on the outsides. This will really help it to crisp up. I like to brush both sides.
Step 7
Bake in the air fryer for 12-15 min at 200 degrees.
