Step 1
Pat dry the lamb rack. Remove silver skin from underside of ribs if needed.
Step 2
Cut lamb rack in half if needed to fit in your air fryer. Spray the rack, including the bones, to lightly coat with oil.
Step 3
Make the parmesan crust: combine parmesan cheese, mustard, olive oil, Worcestershire sauce, garlic, chopped herb(s), salt, and pepper.
Step 4
Coat the rack of lamb with the parmesan crust, pressing it into the lamb chops.
Step 5
Place a perforated parchment sheet or perforated silicone mat in the air fryer basket/tray and spray with oil spray. Place rack of lamb bone-side down, making sure not to overlap the meat.
Step 6
Air Fry at 380°F for 8 minutes. A crust should start to form and be light golden.
Step 7
Carefully flip, trying not to break the crust.
Step 8
Air Fry for another 6-10 minutes, or to your preferred doneness (for medium-rare, internal temperature should read between 120-125°F- we love this instant read thermometer).
Step 9
Cut into individual lamb chops and serve warm.
