💬Listening 💬Take the rack of lamb out of the fridge about 15-20 minutes before cooking to allow to come to room temperature. In a small bowl combine rosemary, thyme and crushed garlic. Mix to combine and set aside.Once the lamb has come to room temperature, preheat the air fryer at 400 degrees for about 5 minutes or as long as it takes you to prep the rack of lamb. While the air fryer preheats, remove the lamb from the packaging and pat dry with a paper towel. Drizzle both sides with olive oil and use your hands to rub into the meat. Then generously season both sides of lamb with salt and pepper before rubbing on the herb and garlic mixture.Place the lamb into the preheated air fryer and cook at 380 degrees F for about 15-18 minutes flipping half way through. Remove the lamb from the air fryer and cover with aluminum foil. Rest for at least 5 and up to 10 minutes before cutting and serving. Serve hot with mint sauce or chimichurri. Enjoy!
