Step 1
Use a sharp knife to cut 3 deep slits into each of the chicken breasts, making sure not to slice all the way through. Rub the Cajun seasoning all over the chicken. Slice the halloumi into 1cm thick slices. Stuff the slits in the chicken breast with halloumi.
Step 2
Put the sriracha and honey into a bowl and mix well. Brush on top of the chicken breasts.
Step 3
Cook in the air fryer at 190°C for 13-14 mins or until the chicken is cooked through (you may need an extra few mins if using large chicken breasts). If you don’t want your halloumi too dark or crispy, turn the halloumi halfway through the cooking time and baste.
Step 4
Meanwhile, put the dipping sauce ingredients into a small bowl. Mix well.
Step 5
Serve the chicken with the dipping sauce, a side salad and rice for a delicious yet simple dinner.
