In a large mixing bowl, add cauliflower, zucchini, asparagus, shiitake mushrooms, and garlic. Drizzle with olive oil and season with Italian seasoning, soy sauce, balsamic vinegar, salt, and pepper. Toss to combine until well coated.
Step 2
Transfer seasoned vegetables to air fryer basket. Air fry at 375F for 15 minutes, shaking the pan halfway through cooking. For crispier vegetables, arrange them in a single layer and cook in batches.
