Perfectly seasoned and air fried until crispy, these Air Fryer Vegetables are ready in 20 minutes!

Air Fryer Vegetables

red bell pepper (chopped)

mushrooms (halved)

zucchini

garlic (minced)

olive oil

Italian seasoning

salt & pepper

parmesan cheese (grated)

Preheat air fryer to 380°F.

Toss all ingredients except parmesan cheese.

Place in a single layer in the air fryer.

Cook 6 minutes, toss and sprinkle with parmesan cheese.

Cook an additional 3-5 minutes or until tender crisp.

In a large mixing bowl, add cauliflower, zucchini, asparagus, shiitake mushrooms, and garlic. Drizzle with olive oil and season with Italian seasoning, soy sauce, balsamic vinegar, salt, and pepper. Toss to combine until well coated.

Transfer seasoned vegetables to air fryer basket. Air fry at 375F for 15 minutes, shaking the pan halfway through cooking. 

For crispier vegetables, arrange them in a single layer and cook in batches. 

These air fryer carrot fries are good enough to convert any cooked carrot hater. All you need are a few simple ingredients and you have an easy vegan side dish or healthy snack to satisfy that salt craving!

Air Fryer Carrot Fries

carrots

cornstarch

paprika

onion powder

tsp cumin

tsp chili powder

red pepper flakes (to taste)

salt and black pepper (to taste)

plain Greek yogurt

mayonnaise

tbsp sriracha sauce

lime juice ((juice of 1/2 a lime))

salt and black pepepr (to taste)

Preheat air fryer to 400°F.

Peel and cut your carrots into 1/4 inch sticks. It helps to cut the carrots into 2 inch pieces and then quarter them vertically.

To a large mixing bowl add carrot sticks and cornstarch and toss to coat. Once fully coated, add olive oil and spices and toss again.

Arrange carrot fries in a single layer along the bottom of your air fryer basket (this may need to be done in batches to not overcrowd the air fryer). Air fry for about 16-20 minutes shaking the basket halfway.

In a small bowl, whisk together all ingredients. Adjust seasoning to desired taste.

This is how you can make the perfect Air Fryer Frozen Vegetables with only 2 minutes of prep! Faster than roasting and just as yummy.

Perfect Air Fryer Frozen Vegetables

vegetables

salt

½ tsp black pepper

garlic powder

tbsp shredded parmesan cheese (optional)

Preheat your air fryer to 390F.

Add your frozen vegetables directly into the basket of your air fryer. I do not recommend using an air fryer liner for this recipe as it will result in more soggy vegetables.

Toss with olive oil and season with salt, black pepper, garlic powder and onion powder. Toss to combine.

Air fry for about 7 minutes. Shake the basket and drain any excess water from the bottom of the basket. Air fry for an additional 7-9 minutes.

If using parmesan cheese, sprinkle with parmesan and air fry for 1 final minute.

Cook up your favorite medley of vegetables in the air fryer for a quick (and delicious) side dish!

Wash and prepare the vegetables.  Slice the vegetables so that they are similar in size. 

Combine all of the seasonings in a small bowl.  

Toss the vegetables with the seasonings and olive oil. 

Preheat the air fryer to 380 degrees. Cook the vegetables in a single layer, cooking in batches if needed, for 8-10 minutes, flipping the veggies at the 6-minute mark.
