Step 1
Preheat the oven to 350ĀŗF. Line a baking sheet with parchment paper.
Step 2
In a medium bowl, whisk together almond butter, egg and coconut oil. Add all remaining ingredients (except the chocolate) and mix until combined. Chill the dough for 30 minutes.
Step 3
Scoop the cookies into round balls and place them on a parchment lined baking sheet leaving 2 inches in between cookies. Add few chocolate chunks on top of each. Bake for 8-10 minutes.
Step 4
Let rest on baking sheet for few minutes before transferring to a cooling rack. You can sprinkle your cookies with more sea salt.
