Step 1
In a food processor add the dried apricots and the walnuts. Process until the mixture starts to come together. You should have a sticky mix when pressed together. This should take around 5 minutes of processing depending on how strong your kitchen appliance is.
Step 2
If using chocolate, melt the chocolate drops using the bain-marie technique*. Place the melted chocolate into a measuring cup to make it easier to drip.
Step 3
Divide the mixture into 8 equal parts.
Step 4
Take one part of the mixture and flatten it on your palm. Place one whole freeze-dried raspberry in the middle of the mixture then form a bliss ball by rolling the mixture. Set aside on a parchment-lined baking sheet.
Step 5
Using a spoon, dip the desired apricot bliss balls into the chocolate and place onto the parchment-lined baking sheet. Using a spoon full of melted chocolate, drizzle some chocolate on top of some of the bliss balls.
Step 6
Decorate with Sous Chef freeze-dried raspberry powder, freeze-dried passion fruit powder, cornflowers and crystalised violets.
