Step 1

Slice zucchini in half lengthwise. With a spoon, scoop out the flesh of the zucchini to make a “boat” for the toppings. Sprinkle with salt.

Drain and rough chop the artichoke. Add to a bowl with the next 5 ingredients. Stir well to combine.

Evenly dividing filling between zucchini halves.

Wrap each stuffed zucchini with slice of bacon, tucking ends under zucchini.

Place the prepared zucchinis onto a baking sheet lined with parchment paper.

Bake at 375F for 35-40 minutes.
