Step 1

Soak vermicelli noodles as per packet instructions. Drain, cut into short lengths and set aside.

Step 2

Place garlic, ginger, chilli, coriander stalks and white part of spring onions/shallots into mixing bowl and chop 3 sec/speed 7.

Step 3

Add mince, flour, chestnuts, soy sauce, salt and pepper and combine 30 sec//speed 4. Transfer into a bowl, add reserved vermicelli noodles and stir until combined. Clean and dry mixing bowl.

Step 4

Place a large non-stick frying pan over medium-high heat and add oil. Add mince mixture and fry for 20-30 minutes, stirring regularly until crispy and golden brown. Meanwhile, continue with recipe.

Step 5

Place water into mixing bowl and heat 5 min/100°C//speed 1. Add egg noodles and cook 3-4 min/100°C//speed 1. Drain, rinse under warm water and transfer into a large bowl. Set aside.

Step 6

Place white part of spring onions/shallots, garlic, carrot, chillies and butter into mixing bowl and chop 5 sec/speed 5.

Step 7

Scrape down sides of mixing bowl with spatula and cook 2 min/100°C/speed .

Step 8

Add cabbage, kecap manis, oyster sauce, soy sauce, pepper, water and snow peas and cook 3 min/100°C//speed 1. Toss cabbage mixture through noodles. Top with green part of spring onions/shallots, coriander leaves, fried shallots and reserved mince mixture just before serving.
