Step 1

In a small sauce pan, bring the water, sugar, and salt to a simmer. Pour over shredded carrots in a glass or heat resistant bowl. Let chill in the refrigerator for at least 30 minutes (max 7 days).

Step 2

Whisk the mayo, sriracha, and lime juice in a small bowl and set aside.

Step 3

Preheat the grill to medium heat. You can also cook in a skillet or in an oven (400 degrees F).

Step 4

Cook the bratwursts for 10-15 minutes or until 165 degrees F in the center.

Step 5

Assemble hot dogs with fresh cilantro, cucumber, sriracha mayo, pickled cucumber and fresh jalapeno.
