Grilled Bratwurst with sriracha mayo, pickled carrots, fresh cilantro, jalapeno, and cucumber

Banh Mi Bratwursts with Sriracha Mayo

bratwursts

hot dog buns

cilantro leaves

cucumber, diced into half moons

jalapenos, thinly sliced

carrots ((pre-shredded/store-bought))

white or apple cider vinegar

water

tbsp sugar

tsp salt

mayo

tbsp sriracha hot sauce

lime juice

In a small sauce pan, bring the water, sugar, and salt to a simmer. Pour over shredded carrots in a glass or heat resistant bowl.  Let chill in the refrigerator for at least 30 minutes (max 7 days).

Pickled Carrots

Whisk the mayo, sriracha, and lime juice in a small bowl and set aside.

Sriracha Mayo

Preheat the grill to medium heat. You can also cook in a skillet or in an oven (400 degrees F).

Cook the bratwursts for 10-15 minutes or until 165 degrees F in the center.

Assemble hot dogs with fresh cilantro, cucumber, sriracha mayo, pickled cucumber and fresh jalapeno.

Bratwursts and Assembly

This salad has crunch from summery produce, like bell pepper, cucumber, and onion, creaminess from feta, and salt and flavor from olives, fresh parsley, and dried oregano. It is the perfect summer dish.

Orzo Pasta Salad

orzo (340 grams/12 ounces)

olive oil (to taste)

orange juice

mini cucumbers (finely diced)

tomatoes (finely diced)

½ bell pepper (finely diced)

red onion (finely diced (I soaked mine

parsley (finely diced)

dry oregano (to taste)

salt (to taste)

feta (measure with your heart)

olives (optional)

Boil the orzo pasta in boiling salted water as per the package directions.

Strain the orzo and let it cool completely. Add the olive oil, orange juice, cucumbers, tomatoes, bell pepper, onion, parsley, and oregano to a large bowl. Add the cooled pasta. Stir well and season with salt. Mix in the feta and olives, if using.

Light and fun summer salad! Using orange juice was a fun twist. Overall a pretty mild, pleasant flavor.

I made this as a side dish for dinner.  I opted for no parsley as I don't care for it. I used the tablespoon of oregano but for my taste it was too much and too bitter. I'll probably use less next time. I also used 1/8 tsp of fresh thyme, and did put a handful of Callamata olives in mine. Overall it was very tasty and refreshing.  I'll probably just tweak it a little differently next time.

The orange juice gives this salad the lightest most refreshing taste with a hint of sweetness. I encourage you to also add orange zest if you want more citrus in this dish.

INGREDIENTS
one small pack of orzo (340 grams) boiled to al-dente in salted water
¼ cup of olive oil, to taste to taste
½ cup freshly squeezed orange juice
3 finely diced mini cucumbers
2 finely diced tomatoes
½ finely diced bell pepper, to taste to taste
½ of a finely diced red onion I soaked mine in water for 20 minutes to make it milder
½ cup finely chopped fresh parsley to taste
1 tablespoon dry oregano
salt to taste
crumbled feta measure with your heart
olives are optional* I didn’t have any on hand

Traditional potato salad with a fun twist of deviled eggs.

Deviled Egg Potato Salad Recipe

eggs

potatoes

mayonnaise

mustard

sweet pickle relish

salt and pepper,

celery (diced)

onions

paprika

Place eggs in a large pot over medium-high heat and cover with water. Bring to a boil then place lid on pot and remove from heat. Let the eggs stand in the hot water for 15 minutes, then place the eggs in a bowl of cold water. Once cool, peel the eggs and set aside.

Place cubed potatoes in a large pot and cover with water. Bring to a boil over medium-high heat and boil for 15-20 minutes, or until tender. Drain and rinse in cold water until cool; set aside.

Cut the eggs in half, remove the yolks and place them in a large mixing bowl.

Coarsely chop the egg whites and set aside.

Mash the egg yolks with a fork and add mayonnaise, mustard, relish, salt and pepper and mix until combined.

Fold in hardboiled eggs, cooked potatoes, diced celery, and green onions and mix until incorporated.

Sprinkle paprika on top for garnish, cover and refrigerate until serving.

I got this recipe for my mother-in-law. It's exactly the same thing as you have. But she taught me to bake the potatoes. And my family doesn't like sweet relish so I use dill relish other than that exactly the same love this potato salad

Turned out delicious! I used dill relish instead of sweet and added garlic powder!
