Combining those two elements of fully loaded <a href="https://cooking.nytimes.com/recipes/1020247-mexican-hot-dogs">Mexican hot dogs</a> makes these easy to cook for a crowd and tote to a cookout. You can prepare the pico de gallo early in the day and keep it in an airtight container until ready to pile onto the hot dogs, split to cradle the fresh filling. Be sure to keep the grill heat moderate. Too hot, and the hot dogs — and buns — will burn and dry out. Too cool, and they won’t take on a smoky char.

Hot Dogs With Pico de Gallo

jalapeños (3 ounces), stemmed, seeded (if desired) and finely chopped (1/3 cup)

Prepare an outdoor charcoal grill or a gas grill to medium heat. You should be able to hold your hand 5 inches above the coals for 7 to 9 seconds before it becomes too hot. Or heat a grill pan on the stovetop over medium.

Make the pico de gallo by combining the tomatoes, onion, jalapeños, cilantro and lime juice in a medium bowl. Season with salt and mix well. Taste and add more lime juice and salt, if desired.

Butterfly the hot dogs: Slice them in half lengthwise without cutting all the way through the skin, then open them so they sit flat. Place them on the grill, cut-side down, and cook until grill marks appear, 3 to 5 minutes. Flip the hot dogs and cook skin-side down until the skin deepens in color, 2 to 4 minutes.

Meanwhile, open the hot dog buns and spread the mayonnaise on the cut sides, if you like. Grill, cut-side down, until toasted, 1 to 2 minutes, then flip and grill until lightly toasted, about 1 minute.

Place the grilled hot dogs in the toasted buns, cut-side up, then pile the pico de gallo into the butterflied opening. Serve immediately, with any remaining pico de gallo on the side.

Bacon Wrapped Hot Dogs

- 2 Green Bell Pepper, Diced

Pit Boss Smoke Infused Applewood Bacon Rub

per Hot Dog Bacon, Strip

Smoke the bacon

Preheat your grill to a medium-high heat: 350°F to 450°F. Before placing anything on the grill, generously oil the cooking grids, using a cloth and vegetable oil.

Heat your grill to medium-high heat.

Lay a slice of bacon on a cutting board.

Roll the bacon and hot dog around until the bacon covers the whole hot dog. Secure with a toothpick on each end.

Repeat steps 3 and 4 again, by wrapping each hot dog with one strip of bacon, and secure with a toothpick on each end.

Cook the bacon wrapped hot dogs on the grill. When the bacon is lightly crisp, remove from the heat. This takes about 4-6 minutes.

Toast the buns by turning the grill up to high. Open the flame broiler. Place bun face down on cooking grids. Toast until desired done.

As soon as the hot dogs are done, place them on a toasted bun, pile on the chopped green peppers, and serve.

Skewer the hot dogs and cheese on sticks, hot dogs on the bottom and cheese on top. Place in the fridge to keep cold.

In a bowl, whisk together the flour, salt, and sugar. Mix in the egg and milk until thick and smooth. Pour into a tall cup and place into the fridge. Pour the panko onto a shallow plate that you will be able to roll the corn dog in.

In a deep fryer or a deep wide pot, heat up the oil (enough so that the hot dog will float) over medium high to medium heat, until it reaches 350°F. When the oil is almost at temp, take the skewered dogs from the fridge and dip into the batter, making sure it is completely coated.

Roll the coated corn dog in panko, making sure that the panko coats all of the batter, using your hands to gently press it on if needed.

Carefully add the coated corn dog to the oil and fry for 3-4 minutes or until golden and crispy, turning as needed. Remove from the oil and let rest on a wire rack.

Roll or sprinkle the corn dog with sugar and drizzle on mustard and ketchup. Enjoy hot!

Whisk the mayo, sriracha, and lime juice in a small bowl and set aside.

Preheat the grill to medium heat. You can also cook in a skillet or in an oven (400 degrees F).

Cook the bratwursts for 10-15 minutes or until 165 degrees F in the center.

Assemble hot dogs with fresh cilantro, cucumber, sriracha mayo, pickled cucumber and fresh jalapeno.
