Step 1
Cook the ground beef and onion over medium high heat until completely browned and the onion has softened. Drain any excess fat.

Add the taco seasoning and water to the ground beef and simmer for 5 minutes.

Melt 1 tbsp of butter in a large skillet over medium heat.
Step 4
Place one large flour tortilla in the skillet and top with ½ cup of cheese.

Add ½ of the meat mixture to the tortilla and sprinkle with another ½ cup of cheese.
Step 6
Place an additional flour tortilla on top. Cook for 1-2 minutes until the tortilla on the bottom is browned and crispy, then flip and cook another 1-2 minutes. Remove the quesadilla from the skillet.
Step 7
Repeat steps 3-6 to make a second large quesadilla.
Step 8
Slice and serve topped with sour cream and chopped cilantro for garnish.
