Best Quesadillas I’ve ever had...or made.  I used packaged, cooked chicken breasts from Costco.  Just added the chicken and spices to the peppers and onions,  so yummy.  I will definitely keep this recipe and make it again.

Delicious!! Loved the seasoning on the chicken it really gave it that mexican flare. I shredded up the chicken to make it all flow together better. And I used a pre-shredded four cheese mexican blend but I am sure freshley shredded cheese would melt a lot easier and make the cheese and ingredients come together a lot nicer. Loved this! Will be making again!

This BBQ chicken quesadilla recipe turns leftover chicken or turkey into a cheesy Tex-Mex dinner recipe that&#x27;s ready in under thirty minutes. You can use any precooked chicken in this recipe, but chopped grilled chicken and shredded rotisserie chicken are my favorites.

Preheat oven to 425°. In a large skillet over medium heat, heat olive oil. Add bell peppers and onion and cook until soft, about 5 minutes. Remove from skillet and set aside.&nbsp;Add ground beef to skillet and cook, breaking up meat with a wooden spoon, until beef is no longer pink, about 5 minutes. Drain fat, then stir in cumin, chili powder, paprika and season with salt and pepper.&nbsp;

On a half sheet, place 6 tortillas around the edges of the pan so that about half of each tortilla hangs over side. Place another tortilla in the center to cover pan completely, then top with ground beef, pepper and onion mixture, cheeses, and green onions.&nbsp;

Place another tortilla in the center (on top of all fillings), then fold each tortilla towards center. Place a second&nbsp;baking sheet on top of tortillas (to help quesadilla hold is shape!)&nbsp;and bake until tortillas are beginning to turn crispy, about 20 minutes. Well, wow. Made this as a cheese steak quesadilla with peppers, onions, and ground beef. Mixed that with chipotle seasoning, garlic, salt and pepper, cream cheese, little mayo, and 1/4 cup water. Cheese on the bottom, cheese on the top and sliced tomatoes. Baked at 375 for 17 min on top of parchment paper, removed the top tray and cooked another 8 min. It was crispy and perfect and so incredibly easy and delicious. Dip in ranch or chipotle ranch for a home run dinner!

this is a total camp classic where i used to work. i used leftover pulled pork with cheese and super yummy!! at my camp we'd cook marinated chicken a night before and chop, mix with cheese, and spread on! if you're having a large group and want to make these prepping it that way is super helpful and making a marinate adds flavor and makes it not be dry! i also cooked mine at a lower temp because i had a lot of meat in mine.

Skipped the seasoning and used left over taco meat. Turned out great.

These were the absolute worst thing I have ever prepared!!!!! 425 way to hot and came out burnt! Bland tasting is an understatement Please don't waste your time and save your reputation.

This is a great crowd pleaser.  So good.  I serve it with Spanish riceroni and refríes beans with melted cheese.

(20cm) flour tortillas

18.20 gm extra virgin olive oil

lemon juice

62.50 ml finely chopped flat-leaf parsley

62.50 ml finely chopped basil

20.00 ml finely chopped capers

garlic clove, crushed

These beef and cheese quesadillas are so delicious and easy to make, that they&#39;ll be a hit with the whole family! Whether you&#39;re looking for a quick lunch or an easy dinner option, these beef and cheese quesadillas will fit the bill.

Beef and Cheese Quesadilla

Large flour tortillas

Ground beef

½ Large onion sliced thinly

Packet of taco seasoning

Water

¼ C. Taco sauce

C. Shredded cheddar cheese

Tbsp. Butter

Cook the ground beef and onion over medium high heat until completely browned and the onion has softened. Drain any excess fat.

Add the taco seasoning and water to the ground beef and simmer for 5 minutes.

Melt 1 tbsp of butter in a large skillet over medium heat.

Place one large flour tortilla in the skillet and top with ½ cup of cheese.

Add ½ of the meat mixture to the tortilla and sprinkle with another ½ cup of cheese.

Place an additional flour tortilla on top. Cook for 1-2 minutes until the tortilla on the bottom is browned and crispy, then flip and cook another 1-2 minutes. Remove the quesadilla from the skillet.

Repeat steps 3-6 to make a second large quesadilla.

Slice and serve topped with sour cream and chopped cilantro for garnish.

Three Chile Quesadillas

ground beef or mushrooms (I did 1 pound of each)

Various chiles (dried

onion (diced)

garlic (minced)

black beans

Tablespoons oil

large tortillas (I used the very large ones made

cheese

Cut portabella mushroom into chunky cubes.

Let any dried peppers soak in hot water for a few minutes the dice.

Crunch up the entire Arbol pepper. Use the skin and the seeds. Add these to a large skillet with a few tablespoons of oil and crank up the heat to medium-high.

Let simmer in the oil for a few minutes.

After a few minutes, add onions and garlic. Then add mushrooms (or beef) and chipotle peppers.

After about 6 minutes mushrooms will start to be cooked down and/or beef browned.

Add in black beans. Taste for salt and pepper also.

Lay each tortilla out, add a bit of cheese to one half, then pile on filling and finally top it with some more cheese.

In a 350 degree oven, cooked each quesadilla for a minute or two open-faced which helps melt the cheese well. Then take it out and fold over the half of the tortilla without filling on it. Then back in the oven for another 5 minutes or so.
