Step 1

In a large skillet, heat the olive oil over medium heat. When the oil is hot add the onions, carrots, celery, potatoes, garlic, thyme, rosemary, Italian parsley and chive. Let the vegetables cook for about 5-8 minutes or until they are nicely wilted.

Step 3

Next, add the ground beef into the same skillet with the vegetables and stir to incorporate the veggies and beef. Cook the beef and veggies until the beef is beginning to cook through.

Then stir in the Guinness and bring it to a simmer. Simmer the beef and vegetable mixture until almost all the beer is gone. Take the skillet off the heat and season to taste with salt and pepper.

Heat the oven to 400F.

Roll out the ready-made pie crusts. Cut out 12 5-6" circles. Place a tablespoon or two of filling onto one half of each circle and then top it with some shredded cheese. Fold the empty half over the filling and pinch the edges with a fork making half-moon shapes.

Place the pies on parchment lined baking sheets. Brush each pie with the egg wash and then place the baking sheet in the oven for about 15-20 minutes or until the pies are golden brown in color.

7.Remove the baking sheets from the oven and let the pies cool for about 10 minutes before serving. They will be very hot inside.

Note: These pies hold well in the fridge for about 3 days and can be reheated in the oven or microwave.
