Step 1
Heat half the oil in large frying pan; cook ribs, in batches, until browned. Remove from pan.
Step 2
Heat remaining oil in large frying pan; cook onion, stirring, until soft. Add sugar, vinegar and the water; cook, stirring occasionally, about 10 minutes or until onion caramelises.
Step 3
Transfer onion mixture to 4.5-litre (18-cup) slow cooker; stir in carrot, undrained tomatoes, thyme, mustard, stock and stout. Add ribs, turn to coat in sauce mixture. Cook, covered, on low, 8 hours. Season to taste.
Step 4
Cut ribs into serving-sized pieces; serve with the sauce.
