Step 1

Place the feta, goat's cheese, 2 tablespoons of the oil and the garlic in the jug of a blender or the bowl of a small food processor and process until smooth. Place a 20cm-square piece of non-stick baking paper on a clean work surface. Spoon the feta mixture along one edge of the paper and roll up to form a log. Twist the ends of the paper to enclose the feta mixture. Place in the fridge for 1 hour or until firm.

Step 2

Preheat oven to 200°C. Place the tomatoes on a baking tray. Drizzle with the remaining oil and season with salt and pepper. Roast in preheated oven for 20 minutes or until tender.

Step 3

Meanwhile, heat a medium non-stick frying pan over high heat. Add the beef and cook for 2 minutes each side or until brown all over. Transfer to a roasting pan. Season with salt and pepper. Cook in oven for 5 minutes. Remove from oven.

Step 4

Cut the cheese log into four equal slices. Top beef with cheese slices. Roast for a further 8 minutes for medium-rare or until cooked to your liking, and the cheese has melted and is golden. Remove from oven.

Step 5

Meanwhile, to make the basil dressing, place the basil and garlic in the bowl of a food processor and process until finely chopped. With the motor running, gradually add the combined oil and vinegar in a thin steady stream until combined. Taste and season with salt and pepper.

Step 6

Arrange the tomatoes, cut side up, on serving plates. Top with the beef and drizzle with basil dressing. Add the spinach and serve immediately.
