Step 1
Preheat the sous vide machine to 131°F (55.0°C) for medium rare or 141°F (60.5°C) for medium.
Step 2
Lightly salt the porterhouse steak then coat with the spices.
Step 3
Place the porterhouse steak in a sous vide bag then seal the bag.
Step 4
Add the bag to the preheated sous vide water bath. Let the porterhouse steak cook until it is heated through, about 1 hour for a 1" (25mm) steak or 3 hours for a 2" (50mm) steak.
Step 5
Once the porterhouse steak is ready, remove it from the sous vide machine and take it out of the bag. Pat it dry with paper towels or a dish cloth so you can get a good sear on it.
Step 6
Heat a heavy pan with some oil in it over medium-high to high heat until it just starts to smoke. Add the beef and sear quickly, about one minute per side. You want the beef to just brown but not overcook any more.
Step 7
Plate the beef like you would a traditionally cooked version.
