Porterhouses are a steakhouse classic for good reason! Consisting of part tenderloin and part strip they have a great variety of textures. They just need to be heated through, usually 2 to 4 hours for a single portion or 3 to 6 for a thicker one. Because part of it is tenderloin, they are more sensitive to overcooking than many cuts of beef.

Preheat The Sous Vide Machine

Preheat the sous vide machine to 131°F (55.0°C) for medium rare or 141°F (60.5°C) for medium.

Prepare The Porterhouse Steak

Lightly salt the porterhouse steak then coat with the spices.

Seal The Porterhouse Steak

Place the porterhouse steak in a sous vide bag then seal the bag.

Sous Vide The Porterhouse Steak

Add the bag to the preheated sous vide water bath.  Let the porterhouse steak cook until it is heated through, about 1 hour for a 1" (25mm) steak or 3 hours for a 2" (50mm) steak.

Remove From Pouch

Once the porterhouse steak is ready, remove it from the sous vide machine and take it out of the bag.  Pat it dry with paper towels or a dish cloth so you can get a good sear on it.

To Sear The Food

Heat a heavy pan with some oil in it over medium-high to high heat until it just starts to smoke.  Add the beef and sear quickly, about one minute per side. You want the beef to just brown but not overcook any more.

Plate The Porterhouse Steak

Plate the beef like you would a traditionally cooked version.
