Step 1
Preheat the oven to 400 degrees Fahrenheit.
Step 2
In a large bowl, stir the egg, sour cream, ketchup, flour, and onion soup mix until well-combined.
Step 3
Add the ground beef and mix just until combined.
Step 4
Shape the beef mixture into two loaves on a sheet pan.
Step 5
Bake for 15 minutes. Drain the meatloaf drippings.
Step 6
Coat the top of the loaves with ketchup. Pour the vegetable juice over the meatloaf.
Step 7
Bake for 30 more minutes, or until a meat thermometer reads 160 degrees Fahrenheit. Let the meatloaf rest for 10 minutes before serving. Enjoy!
