Step 1
Preheat oven to 160C. To make crunchy muesli, combine oats, bran, nuts, seeds, sugar and spices in a large bowl. Combine orange zest, honey, oil, vanilla and 60ml (1/4 cup) water in a jug. Pour over dry mixture and, using your hands, combine well.
Step 2
Spread muesli mixture over a large oven tray and bake, stirring every 10 minutes, for 40 minutes or until dark golden. Cool on tray, then transfer to an airtight container; it will keep for up to 2 months. Makes 7 cups.
Step 3
To assemble trifles, stir orange juice and sugar in a bowl until sugar dissolves, then gently stir in strawberries. Divide brioche among 6 x 375ml (1 1/2-cup) glasses, then top with strawberry mixture. Top each with 2 spoonfuls yoghurt and a little crunchy muesli. Serve immediately.
