Step 1

Heat coconut oil in a large pot over medium-high until the hot oil sizzles, about 1 minute.

Step 2

Add onion and garlic and sauté until fragrant, about 1-2 minutes.

Step 3

Add rice and broth. Cover the pot and bring it to a boil. Turn the heat down to low and let the rice simmer until most of the liquid is absorbed, about 10-12 minutes.

Step 4

Add olive oil, broccoli, and Parmesan cheese and continue cooking for 2-3 minutes until the broccoli is tender and the cheese has melted, stirring constantly.

Step 5

Season with salt and pepper and serve immediately.
