Easy Broccoli Rice

Cook the rice in a small pot over medium heat with the water and salt until the water has been absorbed. This takes approx. 15 minutes.&nbsp;

Cut the broccoli into florets. Wash them. Place the broccoli florets into a food processor and pulse until they're shredded.

In a large pan over medium to high heat, add the canola oil, shredded broccoli, lemon juice, and salt. Stir to combine. Let it cook for 2-3 minutes until softened but still vibrantly green.&nbsp;

Add the cooked rice to the broccoli. Combine. Add more salt or lemon juice to taste and serve!

Heat coconut oil in a large pot over medium-high until the hot oil sizzles, about 1 minute.

Add onion and garlic and sauté until fragrant, about 1-2 minutes.

Add rice and broth. Cover the pot and bring it to a boil. Turn the heat down to low and let the rice simmer until most of the liquid is absorbed, about 10-12 minutes.

Add olive oil, broccoli, and Parmesan cheese and continue cooking for 2-3 minutes until the broccoli is tender and the cheese has melted, stirring constantly.

Season with salt and pepper and serve immediately.
