Step 1

Preheat the oven to 375 degrees F. Generously grease a 9x9-inch baking dish with butter and set aside. Alternatively, line with parchment paper and lightly greese.

Step 3

In a large saucepan, add the olive oil and butter and place over medium heat. Add the onions and cook, stirring occasionally, until softened and lightly caramelized, about 20 minutes. About halfway through the cooking process add the sugar. Transfer the onions to a plate and reserve.

Step 5

Bring a large pot of salted water to a boil. Add the egg noodles and cook until al dente, about 7-8 minutes. Drain, then place in a large mixing bowl.

Step 7

Using a kitchen mixer, such as a Cuisinart, fitted with a blade attachment, add the cottage cheese, sour cream, 1/4 cup of caramelized onions, Parmesan cheese, salt, eggs, and black pepper. Mix until smooth, then add to the large bowl with the noodles.

Step 9

Fold the remaining caramelized onions into the noodle mixture. Spoon the noodle mixture into the prepared baking dish and smooth the top with a spatula. Place in the oven and bake until golden brown, about 35-40 minutes or until set. Allow the kugel to cool slightly before serving.
