Step 1

Preheat oven to 180C/160C fan-forced and line a large baking tray with baking paper. Heat a large deep frying pan over medium-high heat and add the bacon. Cook for 5 minutes, stirring often, until crisp and golden brown. Use a slotted spoon to transfer to a plate.

Step 2

Add pork mince to pan. Cook for 5 minutes, using a wooden spoon to break up any lumps, until lightly browned. Add pasta sauce and stir to combine. Turn off heat and set aside.

Step 3

Using a large bread knife and leaving bread rolls joined together, cut the bread rolls in half horizontally. Lift top off. Use a small serrated knife to score cuts into the top of each roll, without cutting all the way through. Combine the butter, garlic and parsley, and spread into the cuts.

Step 4

Carefully place base of rolls onto prepared tray. Sprinkle with half the cheese, then top with pork mixture, bacon and spinach. Sprinkle with remaining cheese. Carefully return top. Bake for 10-15 minutes, until cheese has melted and rolls are lightly browned on top.
