Combine beef, onion and tamari or soy sauce in a small bowl.

Step 2

Divide mixture and shape gently into 2 patties, 6½ ounces each.

Season patties on both sides with salt and pepper.

Preheat just enough oil to coat the bottom of a grill pan or cast-iron pan over

Cook patties without moving, until a crust develops, about 3 minutes. Flip and repeat on the other side.

Meanwhile, place sesame buns cut side down on pan and toast until browned.

Step 8

Place 1 slice of Swiss cheese on top of each cooked patty.

Step 9

Cover patties and buns with a lid (or another overturned pan) to melt the cheese and lightly steam the buns.

Step 10

Remove toasted bun bottoms to serving plates. Place cheesy beef patties on top, followed by remaining bun halves.
