Step 1
Take a vessle and boil chicken with salt and water till the chicken tender for about 20 min. Take out chicken pieces and shred the chicken. Keep aside chicken stock.
Step 2
In a wok, heat the oil and add maida (gram flour). Saute it till its color changes to a golden brown.

Now add chicken stock, chilies, shredded chicken, soya sauce, green Chili sauce, salt, and Ajinomoto. Mix it well for 5 minutes on a low flame. And then remove from heat.

Add mashed potatoes to the mixture and mix it well. Make small balls out of it give a cutlet shape using a hand.
Step 5
Beat eggs in a bowl with a pinch of salt. Dip the cutlets into the egg mixture and deep fry in hot oil till golden brown.
Step 6
Take out from oil. Crispy Chinese Chicken Cutlet is ready to serve hot.
