Step 1

Put water, oil, cocoa, and a cup of sugar in a pan, bring to a boil and let it bubble gently for a minute. Set is aside and let it cool down.

Separate egg whites from egg yolks. Beat egg whites to stiff peaks with ½ cup of sugar. Keep mixing, add the egg yolks and slowly pour in the chocolate mix. Finally, fold in the flour, baking powder, and baking soda. Bake in an oven preheated to 180°C for about 40 minutes.

Step 3

Mix the butter with 2 tablespoons of icing sugar until nice and fluffy, add the cheese one tablespoon at a time. It might take a while but don't add another until the previous is fully combined. (If you con't get vanilla cheese for cheesecakes mascarpone should work, the important thing is it should be really thick)

Step 4

Let the cake cool completely and cut it horizontally in half. Spread a jar of jam on the bottom half of the cake. Cover it with the cheese cream. Put the other layer of cake on top and spread the other jar of jam on it. Whisk the cream with a table spoon of sugar (you may add some gelatine so it keeps its shape) and put on the second layer of cake. Grate some chocolate over the top. Keep in the fridge until serving. Enjoy!
