Step 1

Cook quinoa according to package instructions. Let cool.

Step 2

Combine all chopped vegetables in a large bowl (red pepper through cilantro).

Step 3

In a small bowl, whisk together olive oil, lime juice, garlic and cumin.

Step 4

Add quinoa to vegetables and toss with dressing.

Step 5

Sprinkle with pine nuts and add salt & pepper to taste.

Step 6

*If using cooked ground turkey, toss together with all ingredients.
