For the Cincinnati chili:

In large pot over medium-high heat, add oil and heat until shimmering. Add onion and cook until softened.

Stir in chocolate, garlic, cayenne pepper, chili powder, oregano, cinnamon, allspice and cloves until fragrant, about 30 seconds. Add broth, tomato sauce, vinegar, tomato paste, brown sugar and Worcestershire sauce.

Stir in beef and bring to boil. Reduce heat and simmer until thickened, about 15 to 20 minutes. Season to taste with salt and pepper.

For the hotdogs:

While the chili is simmering, prepare the hot dogs according to the package instructions and your preference (grill or boil).

Lightly toast each bun in the toaster, on the grill or in a skillet on the stovetop.

Place a cooked hot dog in each toasted bun.

Ladle a generous amount of Cincinnati chili over each hot dog.
Step 10
Top with chopped onion and cheddar cheese.
