Step 1

Prepare the ingredients, clean and wash them (wash the noodles when they are cooked).

Step 2

Sliced ginger.

Step 3

Bring a pot of water (about 1200cc) to a boil over medium heat, wash and change the water for 2-3 times before putting the noodles into the pot (to remove the saltiness of the noodles), put in the noodles, boil until the water boils again and then turn off the heat.

Step 4

Take out and drain the noodles, add cooking oil and mix well to half open the noodles, let cool.

Beat the eggs (you can add a little peppercorns and 2 teaspoons of rice wine to remove the fishy smell or enhance the aroma/or not) and mix well.

Then pour the egg liquid into the noodles in step 4. Mix well, so that the noodles are evenly coated with the egg liquid.

Step 7

Take a wok (pan) and turn on a low heat, first add ginger slices, remove the water slightly, and then pour in sesame oil.

Step 8

Stir the ginger slices until the edges of the ginger slices are slightly curled, then take them out first.

Then add the noodles from step 6. Spread it into a round shape with the same thickness, and fry over medium-low heat until the bottom is golden brown.

Turn it over again, and continue frying until both sides are golden brown, then turn off the heat.

Serve on a plate, then place the ginger slices completed in step 8. Serve immediately (you can eat it directly or dip it in your favorite sauce).
