Step 1
Thinly slice the courgettes and chop the onion, then place in a bowl with a generous pinch of salt. Leave to sit for up to 2 hours.
Step 2
Preheat the oven to 200C (180C fan) or gas mark Squeeze out the salted liquid from the softened courgettes, then mix the liquid with the chickpea flour, garlic powder and a pinch of both salt and pepper, before adding the veggies. You want a wet batter, so add water if necessary.
Step 3
Place on an oil-greased tray, drizzle oil on top, and bake for 35-40 minutes, until golden and cooked through. Allow to cool slightly, then serve and enjoy.
