Step 1
Blend: Add ingredients to the bowl of a food processor and blend until mixed well and crumbly, stopping to scrape down the sides as needed.

Chill: Place the mixture in the refrigerator for about 20 minutes to let it stiffen up a bit.
Step 3
Scoop and roll: Using a 1 tablespoon measuring spoon, scoop up rounded mounds of and roll into 1 inch balls.
Step 4
For a more finished look and to keep the dough from sticking to your fingers, roll the energy bites in shredded coconut or almond flour.

Store: Keep stored in an airtight container in the refrigerator for up to two weeks. To keep longer, store in the freezer for up to 2 – 3 months. Let thaw before eating.
