Preheat the oven to 450 degrees F.

Place the chicken breasts between two sheets of heavy plastic on a level surface.

Firmly pound the chicken with the smooth side of a meat mallet (or the bottom of a frying pan) to 1/2-inch thickness.

Season the chicken with salt and pepper.

Beat the eggs in a shallow bowl.

Mix the bread crumbs and 1/2 cup of parmesan cheese in a separate shallow bowl.

Let the chicken rest for 10-15 minutes.

In a large skillet over medium-high heat, heat 1/2 cup of olive oil or as much is needed to fill about 1/2 inch until it shimmers.

Add the chicken into the hot oil until golden, about 2 minutes per side. Don't worry if the chicken is not cooked through yet, as it will finish cooking in the oven.

Transfer the chicken to a baking dish.

Top each chicken breast with 2 tablespoons of tomato sauce.

Layer each chicken breast with equal amounts of mozzarella, basil, and provolone cheese.
Step 15
Sprinkle each breast with the remaining parmesan cheese and the remaining olive oil.
Step 16
Bake until the cheese is browned and bubbly and the chicken is cooked through at 165 degrees F, about 15-20 minutes.

Serve hot.
