Step 1

Heat oven to 450F.

Step 2

Add diced potatoes onto a sheet pan, coat with olive oil and cajun seasoning. Mix with your hands until the potatoes have been coated and spread them out in a single layer before baking for 50 minutes.

Step 3

To make the scrambled eggs, whisk together the eggs, melt butter in a non-stick pan, and add the eggs to it. Add a pinch of salt and stir the egg mixture until scrambled and cooked through.

Step 4

Once everything is done, put together the bowls by adding the roasted cajun potatoes on the bottom, then eggs, shredded cheese, and salsa.

Step 5

Enjoy or let cool before storing in the fridge for up to 5 days.
