Step 1
Heat 1/4 cup of oil, add chilli flakes. Stir for 1 minute. Remove from heat and set aside for later use. (Note: this recipe require only 2-3 teaspoons, bottle the remaining chilli oil and keep in larder)
Step 2
Combine ground chicken with all the ingredients under 'Marinade', set aside.

Combine all ingredients under 'Sauce' in a bowl and set aside

Heat up wok and add oil
Step 5
Add chopped garlic, grated ginger and chilli

Add marinated chicken mince. Stir and cook for 1 minute
Step 7
Add bean paste and chilli oil. Stir and cook for another minute or two.
Step 8
Add sauce, stir well.
Step 9
Add cubed tofu, gently coat with sauce. Cover and simmer for 5 minutes.
Step 10
Remove lid and stir to mix. Sprinkle with chopped spring onions.
Step 11
Serve with steam rice.
