To make the pesto, place all ingredients in a blender and pulse until smooth. Set aside.

Put the butter in a pan or microwave safe bowl and heat until melted.
Step 4
Place the 4 slices of sourdough bread onto a board or work surface. Brush the sourdough slices with the melted butter and then turn over 2 of the slices.
Step 5
Spread the pesto on them, and place the falafel halves face down on top.
Step 6
Pack the cheese over the falafel then top with the two remaining slices of bread, butter side up and transfer to a hot frying pan.
Step 7
Cook for 5 minutes on each side, or until the cheese has melted and the bread is golden. You can also use a toastie maker if you prefer. Serve immediately.
