Greek chickpea salad is packed with nutrients and super-easy to make. It's the perfect lunch on the go.

Feta Garbanzo Bean Salad

(15 ounces) garbanzo beans

cucumber

(2-1/4 ounces) sliced ripe olives, drained

tomato,

red onion

parsley

olive oil

lemon juice

salt

pepper

salad greens

feta cheese

9g protein. Diabetic Exchanges: 3 fat

Combine the ingredients

Place the first 11 ingredients in a large bowl and toss to combine. Sprinkle with cheese.

Amazing! I changed very little but didn't affect the taste too much. I used a larger can of Olives because I love them (I believe it was a 6oz can). I used 2 Roma tomatoes chopped and I used spinach because I don't like mixed greens. My whole family, including my daughter (8) gobbled it up! Adding it to our family favorites!

My son and I really enjoyed this salad. We decided to skip the dressing that the recipe suggested making and, instead, chose to use Skinny Girl Balsamic Vinegarette. We're both trying to lose weight (I've lost 109 pounds and he's lost 113) and so it's a good salad for keeping the calories low. Next time I'll add some chicken to it for more protein.

Excellent! LOVE all of the fresh flavors this brings together! Perfect for any event!

While this recipe is amazing, I am not sure it should be set for diabetic cooking since feta cheese is not a diabetic friendly cheese.

Served as a meatless entree along with some naan. Very fresh taste. I might add some celery next time for crunch, but it was good as-is.

This salad is truly amazing!   Tasty, light and low calorie!
