Step 1
In a small pot over medium heat, bring mint, granulated sugar, and water to a boil, stirring to dissolve sugar. Cook 1 minute, then remove from heat. Let cool.

Strain syrup; discard mint. Transfer syrup to an airtight container and refrigerate until ready to use.

Make Ahead: Syrup can be made 1 week ahead. Keep chilled.
Step 4
On a large baking sheet or in a freezer-safe container, arrange watermelon in a single layer. Freeze until completely frozen, at least 2 hours or up to 1 month.
Step 5
Transfer frozen watermelon to a blender. Add lime juice, rum, and 1/4 cup mint simple syrup and blend until smooth. Taste and add more rum or simple syrup to taste.
Step 6
Divide mojito between glasses. Serve with a lime wedge.
